That's French for getting all your ingredients prepped and ready to go before you start cooking. I'm not always that organised but have learned from hard experience that it's well worth the effort. Tomatoes, onion, carrot, celery, garlic - all ready to go in with the minced beef to make the ragu bolognese sauce for tonight's lasagne.
