Today's my birthday. I made this lovely cake :)

"Romige bitterkoekjestaart met moccaboontjes"
Ingredients:
2 leafs of white gelatin
500 g almond macaroons (NL: bitterkoekjes)
250 ml cream
1 tbsp instant coffee
2-3 tbsp (walnut)oil
35g of chocolate mocca beans
Approx 20cm diameter round baking tin
Preparation:
- Soak the gelatin for appox 5 minutes in a bowl of water.
- Grind the almond macaroons in a kitchen machine
- Whip the cream until 'stiff'
- Gently mix 300g of the grinded cookies with the whipped cream
- Mix the instant coffee with 75 ml of boiling water.
- Use 3 tbsp of the coffee and the walnut oil and mix with the remaining 200g of grinded cookies.
- Squeeze the gelatin and mix with the remaining hot coffee.
- Mix the gelatin/coffee mix with the whipped cream/cookie mix.
- Put the coffee/cookie/oil mix in the baking tin and press to make a good base for the cake. Use the rounded side of a spoon to press even.
- Add the gelatin/coffee/cream/cookie mixture on top and make even.
- Put the chocolate mocca beans on top for decoration
- Put in fridge for at least 3 hours
