Cordero asado
That's roast lamb to the non-Spanish speakers!
Friends in Burgos introduced us to Lechazo Asado which is a delicious roasted (baby) lamb.
Ever since we tasted the slow roasted lamb in Burgos we like to treat ourselves to a wee bit of Spain here at home in Scotland now and again.
Particularly when the weather is dull, dreich and cold...
This cooked for hours in a low heat oven - just garlic, red wine and sprigs of rosemary.
Delicious!
