Lamingtons

My Dear Fellows & Dear Princess,

These are Lamingtons. They are sponge cake filled with cream and jam and coated in either chocolate or raspberry icing and then desiccated coconut.

It is very important that it is chocolate or raspberry icing ONLY. Otherwise you have not created Lamingtons, you have created a MESS instead.

So I am told.

I once made Lamingtons in Edinburgh for Aussie Jo. She was feeling a bit homesick and I'm nice like that. Unfortunately I coughed into the big bag of desiccated coconut and was picking it out of places for WEEKS after.

I do not think this is the source of one of those Kiwi/Aussie arguments by the way. For example, both countries claim the Pavlova and you don't want to bring it up in conversation because it can get quite heated. But from what I understand, the Lamington is acknowledged as Aussie in origin, however this does not stop New Zealanders from loving it too.

WAIT - WAIT - I'm sorry to interrupt this blip, but I've just been handed a piece of paper - yes, I can confirm that NEW ZEALAND claims to have invented the Lamington too. Controversial! 

As for me, I do not actually care for the Lamingtons. I prefer my sponge unadorned, and therefore go for a nice Victoria over a Lamington anytime. But I got these on my way home today as a special treat for Er Indoors. No reason. I just think everyone deserves a special treat now and then.
