Old Food

We don't eat very much that is very old: wine, cheese, things in the back of my freezer . . .
This patient man showed me how to fillet (flay, filet? - help!) a sturgeon this afternoon. Fun to learn about its anatomy: barbels, protrusible mouth, scutes . . .
It was such a lovely creature, especially the line of diamond shapes along the sides after he sliced off the scutes. I admit it gives me pause to consider that I eat things that were once alive. This fish could be at least six years old, and like every living thing, is beautiful and complex - as was every living thing this fish once ate.
Thank you to every living thing I once ate, and will eat.
