New Year's Superstition, Pork (Thanks Barb)

It was her family tradition..(superstition) that you had to have pork on New Year's day for good luck. I've been making it since we've been married and I guess it's working. 
Today I made pork loin stuffed with spinach, mushrooms and sausage and covered with bacon. 

Hopefully once a year it won't kill you.
