Aubergine
Wrung out after an exhausting and rather difficult week, and thankfully, after a day of racing round trying to find last minute stuff for my son's community service in Malawi next week, he cooked supper.
At the risk of sounding a total fruitcake, I have always loved aubergines; as a kid, we never had "foriegn stuff", it wasn't in the shops and Dad wouldn't eat it anyway. It was on numerous summers spent with a French family in Provence, who introduced me to ratatouille, that I discovered these gleaming purple beauties.
