Thinking of the waist line
After a week of traditional Christmas feasts it was almost a relief today to get back to something relatively modest and not overburdened with calories.
On the table for this evening’s meal - a slice or two of sautéed chicken breast on a bed of rice laced with chopped onion and peas and generously drenched with sweet and sour sauce.
Delicious and so quick and easy to prepare and cook - little more than 12 minutes from start to being served.
Not that I am adverse to all those festive meals, but when you have an eye on calories and carbs, sweet and sour chicken is a satisfying break in the festive routine.
