Making Dala Horses

Today was an extremely busy day - Physical Therapy, a visit to a friend, a visit FROM a friend, then my electrician, who didn’t stay long because the repair to my lights will take more time than he had, and finally my sister and her husband. Somewhere in the midst of all that I found time to make some Swedish Pepparkakor (ginger biscuits or cookies), wafer thin. They are traditional at Christmas and particularly on Santa Lucia Day which was yesterday, so I was a day late. Oh well, they were nice to have for my visitors this afternoon and evening.

I made most of them in the shape of Sweden’s Dala horses. My Swedish friends gave me (and Dolly!) these traditional horses earlier this year and I love them. My Swedish grandmother also had one in her house. I bought the tray when I was in Sweden this last summer and the cookie cutter came from our local farm shop!
