Rick Stein's Californian Chopped Salad

Jack and I have been watching Rick Stein's new series where he travels along the Pacific Coast Highway from SanFrancisco and eventually over the border into Mexico. The PCH is one of our favourite drives and we have done many times.

Anyway this chopped salad was one of the recipes and looked fun to assemble Lettuce, salami, chickpeas, avocado, tomatoes, mozzarella and a good salad dressing. It was very tasty. And all the recipes are already online.(We added the avocado)

Went to the panto rehearsal just to deliver posters but ended up standing in for a absent chorus member. Suddenly realised as we sang and danced our way through Star Girl that I will be so happy when I am no longer on the steering group and ending up as the producer. Then I can just audition and act!
