Devils Food Cake
Ingredients
6oz Butter
8oz Castor sugar
3 Eggs
6oz Self-raising flour
2oz Plain flour
½ teaspoon of Bicarbonate of soda
2 ½ oz of Cocoa
2 teaspoons of Instant coffee
½ teaspoon of Red food colouring
4 fl oz Water
4 fl oz Milk
Whipped cream (optional for joining cakes)
Chocolate Frosting
4oz Dark chocolate
4oz Butter
Alternative toppings: Mix up some icing sugar or butter icing.
Method
1. Grease 2 deep 20cm round cake tins or use muffin/cake tin if making
individual cakes.
2. Beat butter, and sugar until light and fluffy then add the eggs beating well.
3. Fold in sifted flour, bicarbonate of soda and cocoa.
4. Mix coffee with milk and water then gradually add to mixture continuing to
fold ingredients together.
5. Turn into prepared tins and bake in oven at 180c/350f or Gas mark 4 for
around 20 minutes. Adjust time depending on whether making one large
cake or individual cakes.
6. Cool on wire rack.
7. Join cakes with whipped cream or mock cream and then top with rich
chocolate frosting.
To make chocolate frosting
1. Combine chocolate and butter in heatproof bowl over pan of simmering
water.
2. Stir until smooth, remove from heat and allow cooling to room temperature
until spread able. Stir occasionally while cooling.
Storage: Airtight container.
Freeze: Uniced cake suitable.
Microwave: Icing suitable.
