Maple Coffee Gateau

I’ve been wanting to make an old school coffee gateau for a while, but this one has a little twist - it’s not just coffee, but maple too. It’s crowned with maple syrup caramelised pecans, callebaut chocolate pearls and coffee beans. Made for my friend Steve’s 60th birthday.
