Typical of Xativa, where we stayed last week, this dessert is one of the many aspects of the area linked to the Arab culture which dominated for 800 years until the fifteenth century, often denied in its importance and referred to as an 'interruption'. We ate this dessert while we were there and this morning I've tried to recreate it at home, using roast pumpkin, ground almonds, sugar, eggs, olive oil and cinnamon. It looks just like the real thing - I hope it tastes as good.
