Stuffed aubergine

I've gotta say, it tastes a whole lot better than it looks....

We were given a whole tub of these by a lovely old Syrian lady. She makes them at home in a very long process (which she sadly hasn't taught her daughters so it may not continue). She dries the aubergines outside under blocks, then deseeds all the peppers which burn her hands, then mushes them up, stuffs the aubergines with them and nuts and then puts them in oil to preserve them for the winter.
