Fluffing around

Here's my go at the Japanese fluffy pancake I had in NZ last week. They are totally easy to make. Here's how:
1 large egg, separated
10g sugar
Squeeze of lemon
20ml buttermilk
1/2 tsp vanilla
20g self raising flour
Combine yolk, milk, vanilla and flour until smooth. Beat white til soft peaks form, add sugar and beat til glossy. Beat in lemon juice.
Fold white into yolk mixture. Heat small pan with a little butter and cook in small about 3 mins on low heat then bake (in the pan) in oven on 160 about 5 minutes.
