To mix

The large pergola is divided into nine sections, each supporting a single vine. There are five varieties altogether; Sultana (1), Muscat (2), White Syrah (3), Limnio (1) and an unknown variety of very good white wine grape (2). This is a single section of Muscat. It looks as though this year we might have some wine-making to do. We mix all the varieties together to get the best of what each has to offer; generally speaking the whites provide more volume and the darks provide more character.
