Perfect Pour

Giorgio shows exactly how it should always be done . . . a chilled glass and perfect head. He hails from Georgia and has worked in El Caseron which we call Champions and is situated around our block for four years. Previously a chef in the kitchen, he moved front of house to have a shift that lets him get home to his wee three-and-a-half year boy at 6pm. His wife is expecting a girl. 'That's enough,' he says, 'It's time to turn off the taps!' or 'have the snips', as we say in English!
