Do You Know The Muffin Man?

Nope! But I'm on a quest to become a Muffin Queen.

I got some silicone cake cases out of Ikea the other week and decided to try making some muffins. I tried once before many moons ago and it was a disaster but happily they turned out much better this time round. I believe the secret is not to over-mix the batter.

These are Easy Peasy Chocolate Chip Muffins and they turned out fantastically. The recipe calls for you to sprinkle a mixture of caster sugar and soft brown sugar on the top just before you bake them. This gives the muffins a lovely crunchy top that tastes ever-so-slightly treacley in places. Om nom nom!
