to Get a Brew on

Here you see the first of this seasons apple juice that has just been extracted.

It goes in to the fridge overnight so that it can settle properly and the sludge can be separated.

The apple variety is called Discovery and with us this is the first variety to ripen.

This juice is destined to become apple champagne - but not yet.

I have found that the secret to a good apple wine is to have a number of different types of apple (including cookers and crab apples) in the must.

So for the time being this juice will be frozen until further varieties of apple are available.
