Soup, where is thy sting?
(mostly in my fingers as it goes...).
Following on from yesterdays Nettle blip, and after realising how many nettles there are in the garden (a lot), decided to have a go at Nettle Soup.
First you have to pick a pound of nettle tops (those too young to know what a pound is - google it!), which is a carrier bag full. Then you rinse them and cook them down in a pan with some onion and butter ... this is when I took this picture and that was my biggest pan!
The add stock, simmer for a while, puree, add milk and seasoning and serve.
I have tasted the result and it's not bad ...
Problem is I am now having trouble typing as my fingers are numb from nettle stings....
