Dolly's gooseberry curd

Several people have told me I'm strange for not liking jam, and they always sound personally offended when I tell them! I never liked it as a child either, but I have always been partial to a bit of lemon curd, and curd seemed the way to go with this years gooseberries! I picked them most of them at the weekend, and a few remaining stragglers today, so they were just ready to be used! It was easier than I thought, I haven't made any preserves before, so I was pleased it worked! It tastes really good, I'm looking forward to using it on some brioche, homemade is always best!
