Salt Marsh Lamb

This Salt Marsh lamb is the meat from sheep which graze on the salt marshes of the Grange Estuary, where the ground is washed by the tides and supports a range of salt-tolerant grasses including the increasingly popular wild samphire. Oven roast potatoes, cauliflower cheese, asparagus, a bottle of red wine, shared with good friends on a Sunday lunchtime. What could be better!
