Chit Chaat

Chaat is a spicy potato cake, shallow fried on a cast iron plate. It's served with chickpeas, red onions, tamarind and mint chutney. It's a popular evening snack. This is a chaat cart that the vendor takes around the streets every evening and his callout to residents is a tapping sound he makes on the edge of the iron plate. He'll stop outside a house when called and after some rounds, station himself near the park. People will collect around the cart and eat chaat which he will serve up in a plates made out of plantain leaves, but which are increasingly being replacing by plastic plates.
