Fruit Compote!
First, a zillion thanks for yesterday's, stars, faves and comments~I just reach the SPOTLIGHT for the first time! The smile is enormous :):)
I put this compote in the slow cooker yesterday evening and it cooked overnight. Its the first time I've cooked anything overnight, and because I've got such a thing about turning everything off at night....I was of course worried that it might run out of water etc. In fact there was a bit too much water (because I put the whole amount in and forgot to halve the quantity like I did everything else!
It tastes wonderful. Now I've just got to decide what to do with the rest :) If I keep on like this I will run out of storage boxes (and space) in the fridge and freezer :)
I am now wondering about making some blueberry muffins with the remainder of them , but with SR flour because I have not got plain! Anyone have any idea as to whether muffins freeze? or not?
Was also going to cook some chicken in the slow cooker, but I can't cope with the stir frying first at the moment, so I'm going to roast some and freeze some instead... Here's a question for you~can I defrost chicken, then cook in the slow cooker, then freeze it again???
Not feeling particularly good today, bit of a rough night with the lump and very sore leg. Got out of bed this morning and had pins and needles in that foot, so I'm tempted going to rest again all day (just doing gentle exercise). Not planning to go to church, trying to hit this infection on the head (or leg) before work tomorrow if I can!!!
So today:
The weather is cloudy at the moment, was planning to mow the meadow grass, but that's going on hold, can't risk anymore leg problems right now...
Rest and recuperate as much as possible
A little laundry
A little tidying and filing
AND tonight
DOWNTON ABBEY is back on ITV1 :)
In other news Happy Birthday to my nephew A who is 18 today! Its unbelievable that 18 years have gone so fast.... Just such a shame we're not a close family so I've not seen nephews as much as I would like!
