Moving Into The Unknown

Ethiopia Agaro

I've roasted up some beans from the Ethiopia Agaro region - harvested by the Nano Challa Cooperative. This region is said to be the birthplace of coffee and from what I've researched, there are large tracts of pristine forest that shade the tall, spindly coffee trees.  This particular cooperative slowly dries the beans in the shade, rather than drying them quickly in the sun.  The difference supposedly heightens the flavors inherent in an already great bean.  All I can say is that I've had two of the best pour over coffees from this batch that I've had in a long while.
