Carrot And Feta Muffins

Based on a recipe by Huge Fairly-Hairy Bum*.

I was hoping these would be acceptable to the little girl as a lunch item, but they never passed the Art Director's taste/texture test. I've never seen her have such a visceral reaction to any food before.

Honestly they weren't that bad. The rejects seemed to go down OK at work.

*Not his real name, just what my sister-in-law calls him.
