Bebop-a-Rebop...Rhubarb!
I followed Rose Levy Beranbaum's recipe for rhubarb pie with cream cheese crust and it was delicious! This was my first experience making a lattice crust. Beranbaum created a crust that is easy to work with and the addition of cream cheese makes it a bit stronger, yet it handles well in creating the lattice, and the dough bakes up tender.
We entertained friends for a pre- Easter lunch. It was a delightful visit with scintillating conversation. Mt. Adams was mostly hidden by clouds, but other than that small disappointment...a great day!
