Aromatics
April is going to be a busy month for entertaining so I am starting my prep early.
The nutmeg, juniper berries, white peppercorns and cloves are going into a brandy butter which will be used to baste a roast next weekend.
I also used nutmeg in a béchamel I am making for my Spanish croquetas. I tasted the most amazing tapas in Madrid recently and was determined to replicate them. They will form the starter for at least two dinner parties.
