Courgettes and lettuce

As a vegetarian I've noticed there is always interest in fruit and veg when it becomes unavailable. What I'd like to know is who normally buys three or more lettuces in one shop? Rationing leads to panic buying and probably more food waste alongside the inevitable increase in price.
When I took this photo it reminded me of a farmer's field but actually isn't.
