My first roast!

Ok, this may not be my best food photo ever, but it's the first roast dinner I've ever cooked! Those who follow me will know that, after 12 or 13 years of not eating meat, hubby and I recently returned to the dark side! As such, I'm a bit scared of meat cooking. I slow roasted a pork hock a few weeks back, but this is my first full roast dinner. There are a few refinements to be made - the pork could be slightly pinker for my tastes and the carrots and fennel should have gone in 5 or 10 minutes earlier, but pretty good nonetheless.

For those interested, I coated the loin with balsamic and oil, then rubbed with salt, pepper and rosemary, studded it with garlic and roasted it on top of the veggies.
