Lunch
I've been practicing my cooking skills a lot the last couple of months.
This was my lunch. I was really wanting a burger, but a lack of cheese and hamburger buns just didn't jive with me on that front.
I opted to just make myself a portobello mushroom sandwich anyway, and I'm glad I did. I tossed a little tab of coconut oil in a pan, let it melt and threw some cumin, cayenne pepper and garlic salt in there. Then I threw my giant portobello cap to cook in it.
A piece of amazing dave's killer bread, some fake mayo and dijon mustard did this sandwich wonders. Along with the avocado and hot sauce topping. Totally quenched my desire for a burger.
Being vegan is pretty easy most days. I have my moments, and don't beat myself up, but at least I'm doing better by the environment and for my health in the grand scheme of things.
