Today, in celebration of Terra Madre day, the Fischlis were awarded the Slow Food prize by Slow Food Ostschweiz. They are the only people still producing Schabziger on the alp - true "food heroes" keeping an ancient tradition alive. A delicious tradition.

Schabziger or sapsago is traditional cheese exclusively produced in the Canton of Glarus in Switzerland. Schabziger is made out of the skimmed cow milk and a special kind of herbblue fenugreek (Trigonella caerulea), also called blue melilot
