The ultimate sausage!

Today I went to Mr V's for a sausage making lesson! Off I went to his unit where I was togged out in a white coat, clean white Wellington boots and a very alluring blue hair net!

Once I was scrubbed up off we went for the first process.

The meat ( 200 kg ) was already chopped into large chunks ready for the first mincing process. We were using Tamworth pig meat which is a really old breed and not only is it very tasty but it does have a good ration of fat which is good for making sausage. It was minced using a coarse setting, rusk, herbs and water were then mixed in to the coarse mince and then it was then minced again using a smaller sized mincing plate .

We then headed for the sausage making machine. The machine was filled with our sausage meat .The nozzle was selected the casing placed on the nozzle and we were ready to go. Off I went watching the huge curling sausage zoom through my hands! Success! We had sausages !Then it was learning to tie them. Not as easy at it might seem but I did get the hang of it eventually!

The picture is of the most delicious sausage that I made! Amazing!!

Post script. I do love fireworks and I don't want to be a moaning Minnie but the poor dogs as absolute wrecks not to mention the horses. Such a difficult time for them. Both are panting and clinging to me currently. :-(
