Watercress Soup

I was inspired by watching a foodie program to make this creamy and rich green watercress soup tonight - also did a sauté dorado escabeche - see extra - enjoying the challenge of new creations and trying to emulate something without a specific recipe to follow. Turned out pretty good - one for the recipe book - all in all not a bad first day back - no real impact from jet lag this time
