Late night muffins

The mother of one of my flatmates is a volunteer at their local food bank. For me, this means that my flatmate somtimes brings home weird leftovers: she once had then packs of coconutmilkpowder, for example.

This time, she had three packs of pancake mix. We are both a little pretentious when we cook, so instant pancakes are kind of below our standard of what we consider 'real' cooking. So we decides we would try to make other things with them, like muffins. It was very late, so we couldn't go to the supermarket. Instead, we just gathered everything we thought would taste good with muffins, and made two diferend kinds: chocolate-coffee-muffins, and carrot-raisin-muffins. Making it was the most fun: pancake mix is apparently really not supposed to be used for muffins.
