Oregano

When we moved into our house 7yrs ago mum and dad did their usual fantastic thing of stocking the garden with loads of stuff from their park of a garden.
It's always a bit hit or miss as to what takes as our soil is quite different from theirs. But something that has done rather well is the oregano.
Each year as I clear it away I kick myself that I haven't got round to harvesting it properly to use.
Last year I did, and froze it. It was rubbish!
So this year I'm trying to dry it and see how that works.
Fortuitously it's a sunny day so drying should be a speedy process. It's always fun trying these things out.
Any tips or advice...?
