Tomato Soup!
It is a delicious soup recipe! Roughly, it serves 5-6 people,
and it's definitely worth the effort! Here is the recipe!
1 1/2 lb ripe tomatoes
1 red onion
1 medium carrot
1 stick of celery
6oz potato
1 tbsp olive oil
1 clove garlic
1/2 vegetable stock cube
2 tbsp tomato purée
1/2 tsp dried basil or mixed herbs
Ground Black Pepper
4 tbsp semi skimmed milk
Cut tomatoes and onion into small pieces. Cut carrot and celery into thin slices. Peel and cut potato into small chunks. Cook onion in hot oil for 3 mins then add other veg except tomatoes. Add garlic clove crushed, Cook for another 3 minutes, stirring occasionally. Make up stock cube with 1 pint boiling water and stir in Tomato puree. Add stock, tomatoes, herbs and a pinch of pepper to the pan. Bring to boil then turn down heat, put lid on pan leaving small gap. Leave to bubble gently for 20 mins. Allow to cool for 10 mins then blend until smooth. Add milk to soup and gently heat. Serve with a sprig of fresh basil.
