Chewy Ginger Cookies

1 1/4 cups granulated sugar
2/3 cup vegetable oil
1/4 cup fancy molasses (what makes it fancy?!)
1 3/4 cups all purpose flour
1 egg
1 1/2 tea spoons ground ginger
1 tea spoon cinnamon
1 tea spoon baking powder
1 tea spoon baking soda
1/2 tea spoon salt

Put 1 cup of the sugar with the molasses, oil and egg in a bowl and mix together lots.

In a separate bowl mix everything else. Add the dry mixture a bit at a time into the sugar mix and give it a good stir.

Roll tablespoons of the mixture into balls, roll in the remaining sugar and put onto a greased baking sheet with a good bit of space between them. Bake at 375F or 190C for 10 mins. Leave to settle for a minute when you take them out of the oven and then put on a cooling rack. Leave them another 5 minutes or you'll burn your mouth! Enjoy!
