Yummy hummus…….
……for an early brunch……some Golden Beet hummus that I made on Sunday (which has been sitting in the fridge 'maturing' since…..and, a bit like a curry, it's always nicer a couple of days on I think!)……deliciously earthy and very moreish!!
Recipe……just in case I forget what I put in it…….
The largest of those golden beets (peeled, chopped and roasted in olive oil with a sprinkle of salt until tender)
Allow to cool a bit then use a stick blender to combine with…..
one 400g tin of (drained) chick peas
1 heaped tsp minced garlic
2 heaped Tablespoons tahini
2 glugs lemon juice (though I'd have used a small preserved lemon if I hadn't discovered I'd run out at the last minute!)
1 tsp cumin seeds
half tsp smoked paprika
half tsp celery salt (I would have left this out if I'd used a preserved lemon!)
a glug toasted sesame oil
