Clay Oven

Well this is the first appearance of the clay oven this year. It's an all day thing - you've got to stoke it for two hours until it reaches optimum temp - 400C - let it cool a little and then whack in the lamb (shoulder in this case). Leave for about four hours and then tuck in. Wonderful - a real treat!!
