Perfect Winter Stew
Lamb Stew in the Slowcooker.
Ingredients:
2/3 pkts Lamb knuckles or neck
4/5 potatoes
3/4 carrots
1 large onion
3 stalks celery
3 baby marrows
1 tin tomato
1/4 cup Worchester sauce
4 tbls Chutney
2 Bay leaves
Paprika
Barbecue spice
Salt & Pepper
1 pkt Brown Onion or Oxtail Soup pkt
Maizena (for thickening)
Method:
1. Season meat with spices.
2. Place in slow cooker alternating layers of meat and veggies.
3. Add Worchester sauce, Chutney, Bay leaves and tomato.
4. Mix soup pkt with 1 cup boiling water and pour over.
5. Stir gently to mix.
6. Cook on low for 10-12 hours or 5-6 hours on high.
Alternatively cook on stove over medium heat for 2-3 hours after first browning meat.
7. Before serving, mix maizena to thicken gravy.
8. Serve with rice.

This is a family favourite and always enjoyed on a cold day. Brings memories of large family gatherings on Friday nights or Sunday lunches!
