in Puerto Rico, they take green plantains, chop 'em up, fry them, mash 'em with garlic, pork rind, salt olive oil. Then you cook a sofrito (blend of herbs n spices and veg thats the basis of a lot of dishes out there) saucy tomato based sauce with either chicken, fish, pork or seafood. serve together and you have MOFONGO day!!! Soul food of the Caribbean.
