FUN WITH FUNGI

I rediscovered this "Great Scandinavian Cookery" book today - translated from the Swedish and published in English in 1966, and bought by me in a library sale about 15 years ago, and then forgotten in a cupboard. There's a surprisingly large number of colour illustrations for the time - this is the first of four pages of fungi. I may return to it during blip-famine times. You may all be grateful for the recipes for roast ptarmigan or capercaillie in aspic, or detailed illustrations of fish-gutting, or creative napkin folding for dinner parties! (Now I remember why I bought it.) Meanwhile, let me know how you get on with the fungus soufflé.
