Fancy Dancy

We went to a fancy dinner service and this "German Potato Salad" was placed in front of me.  It was visually interesting, what with the different colored slices of potato, the bacon cooked into a circle and practically standing on edge, and the greens held together by their root.
        But eating the dish was not as much fun as looking at it. The potatoes had cooled to tepid, the bacon was stringy, and you had to have horse teeth to chew the greens.  And I have no idea what the foam in the middle was made of.
