Easter Monday!  In the UK this is a 'Bank Holiday' (national holiday), as was Good Friday. So for most people it is a 4-day weekend - unlike the US where there are no extra days off of work for Easter. However, my niece and her husband are doctors and he was working some of the weekend, so we didn't have our family's main Easter meal until today.

This morning started with a pancake feast - buttermilk pancakes, blueberry pancakes and chocolate chip pancakes with maple syrup (Aunt Jemima's from the US), strawberries and creme fraiche. All very yummy!  

Late afternoon we had the traditional Easter Lamb roast. Rhubarb and strawberry crumble was planned for dessert and Aneeta, my Great-Niece, helped her grandma make the crumble. And she did a very good job too! It was delicious!!
