Enchilada Monday

Monday was a pretty normal sort of Monday.  We had some crazy weather though.  Some wind and rain in our forecast this week.

For dinner I made some black bean and chorizo enchiladas.  They were too spicy for the Sugar, but I found them to be tasty (but ended up giving me wicked heart burn).
