Small potatoes
De-sprouting very many baby spuds was quite a challenge at the cafe today.

I should point out that these small, fragile sprouts don't affect the edibility of the potatoes at this stage but need to be removed before they deplete the water content of the tubers. These were stored correctly in lidded cardboard boxes. However, I'm surprised how often people don't know how to store potatoes. They should be kept in a cool (but not fridge-cold), dark place and never in the plastic bags they are often sold in. Washed potatoes won't keep as well as those still with a dusting of soil.
