Meatballs and polenta
Jamie Oliver to the rescue with this recipe.
It was a very simple dish of meatballs, tomato sauce and polenta! The sauce was delicious with chunks of aubergine through it and slow cooked to thicken up with the addition of balsamic vinegar and sweet chilli sauce!
The meatballs were very simple as well, nothing more than beef mince and parsley!
But it was the polenta that really let the meal down. It was the first time I had cooked it and will certainly be the last! It was sticky, tasteless and didn't mix well with the sauce!
But I guess that is the point of this year, to try new things and have fun while exploring!
