Beheaded Sea Bass

Sea bass for tea tonight, but I asked the fishmonger at the local supermarket if he could cut off the head, as I don't really like it glaring at me while I'm eating, and put it in an oven ready bag with few knobs of lemon butter mmmm it was delicious with Mediterranean rice and tiger bread.
