Carrot & coriander soup

With the weekly vegbox arriving on our doorstep today, this means LOTS of carrots!! And having eaten so much cherry pie over the last couple of days (from 4th of July), my belly and I were well overdue for something a little more ... nourishing. But just as yummy of course.
